  2. Partial fermentation is used by winemakers who want to make a wine that’s naturally lower in alcohol. It works by stopping the fermentation process early before all of the sugar converts to alcohol. That’s why these wines tend to be sweeter than regular wines.
  3. Distillation and alcohol removal is the most common way to make non-alcoholic spirits. Whether it's whisky, gin, or rum, the drink is made in the usual way and then the alcohol is either boiled off at a low temperature in a vacuum or removed from the rest of the liquid using a spinning cone column.
